First blog of the summer… should be simple and fun…

So… here’s a collaboration piece May and I did. 

Finally home for a whole day…I cut a big bunch of basil from the very healthy plant on my balcony …which I share with a pigeon friend named Cooper...who I have to keep from making nests right in the pots. I made some pesto, and gave a jar of it to May when we met at a quiet and fancy steak house for our very important July business meeting. Although she seemed happy to receive it, she left it in the restaurant when she went back to work. When she realized she didn’t have it she called the restaurant and they had found it and waited to hear if anyone really cared…She picked it up and that night made this delicious looking pasta dinner. 

Here’s the best part for me….… there I was, not knowing any of this had happened with May forgetting the jar of pesto… kind of zonked out on my couch from 3 hours of teaching students how to make slab cups…which btw came out so great…love making cups…and my phone signaled me that I had a text…from May…opened it up and this photo pops up with the caption “Yum!”… and then a short explanation of the mishap. 
Picked me right up…big smiles…here’s my pesto recipe… 

Yummy Pesto 
1 medium garlic clove 
½ cup olive oil 
Bunch of basil…about 4-6 cups of the leaves 
½ cup walnuts 
½ cup grated parmesan 
½ teaspoon salt 
Put garlic clove in food processor and grind up with blade attachment. 
Add the olive oil, basil, nuts, parmesan, and salt and blend to whatever consistency you like.

Ps.. almost forgot to mention that the pasta dish is on one of May’s ‘perfect for pasta’ bowls.

Sounds like something I would do, forget the pesto. I'll have to try making it with walnuts, usually I use pine nuts.
